Maldives
Maldives is long thought of as an expensive destination, but only if you stay in those over water bungalows. Since they open the local islands, there is so much to see and learn about this low-lying island nation:

Transport: there are public ferries connecting all the local islands. If you’re heading to a resort, you’re likely to go there by chartered boat or sea plane!
Currency: Maldivian Rufiyaa, 10 rufiyaa = 5 hkd = 0.65 USD
Sim Card: you can buy both physical and e-Sim for Maldives. You should get WiFi at your resorts but if you’re island hopping, I recommend Dhiraagu.
Handy Apps: Nakaiy Nevi is a great local weather app
Language: the official language is Dhivehi, but most people speak English!
