Laos
Laos is not as popular as its neighbours but it is a more laid back, off the beaten path country worth a visit. Luang Prabang with the famous waterfall and historic UNESCO heritage old town, Vang Vieng surrounded by limestone cliffs, and the Luang Namtha region full of undiscovered trails and remote ethnic villages:

Transport: There is a new train line that connects the capital with Luang Prabang, with Vang Vieng as a middle stop. Otherwise, you have to take tourist or local buses between cities, and be prepared for bumpy rides!
Currency: Laos kip, although some places also accept Thai Baht and USD.
Sim Card: I got sim cards that worked for the entire region like this, but you can also get them at the airport or in town.
Handy apps: Klook is good for booking tours and transport. Otherwise, it’s best to ask your hostel/hotel/accommodation for help.
Language: Lao, which is a little similar to Thai. Sabaidee = hello, kup chai = thank you
